Our Merchant series celebrates culinary traditions around the world. This iteration focuses on Valle de Balsas, situated in the highlands of southwestern Mexico, where a wild grass known as teosinte was cultivated over thousands of years into the many varieties of maizes and sweet corn enjoyed around the world today. In honor of the place and people that domesticated corn, we wanted to transform one of our favorite Mexican corn snacks, elote, into a hot sauce. This delicious, golden beauty of a sauce is full of fire roasted sweet corn, local habanero, tangy lime juice, and a blend of spices.
